Modern English/British cuisine is essentially a combination of traditional British recipes with modern innovations, using high quality organic and/or local ingredients. It has been greatly popularised in recent years by the increasing number of TV chefs and by the international acclaim received by British chefs such as Heston Blumenthal. His restaurant - The Fat Duck at Bray - has been awarded 3 Michelin stars and, in 2005, it was rated as the Best Restaurant in the World by 'Restaurant Magazine'. Blumenthal has certainly pushed the boundaries of creative modern cooking well beyond what many people consider its limits, creating such exotic 'taster' menus as Nitro-Green Tea and Lime Mousse, Oyster and Passion Fruit Jelly, Lavender Pommery Grain Mustard Ice Cream, Red Cabbage Gazpacho, Quail Jelly, Cream of Langoustine Parfait Foie Gras, Oak Moss and Truffle Toast, Snail Porridge, Salmon Poached with Liquorice, Mango and Douglas Fir Puree and Scrambled Egg and Bacon Ice Cream (£115.00 + £90.00 for a selection of wines + 12.5% service charge). It certainly seems to pay to be adventurous.

Closer to home, modern cuisine restaurants in Warwickshire, like Queans in Leamington Spa, are producing far less controversial but interesting modern innovations on traditional favourites -- Roasted Beetroot And Chickpea Pate, Sweet Potato, Apple And Roasted Red Pepper Soup, Roast Loin of Lamb Coated In A Coarse Grain Mustard Crust, Served With A Spicy Apricot And Pear Compot, Pan Fried Pigeon Breast Served On A Stuffed Portabella Mushroom Accompanied With A Whisky And Ginger Gravy, Blueberry And Raspberry Suet Pudding Served With Custard, Cream Or Ice Cream. The house speciality seems to be the sixteen home-made ice creams created by the chef and proprietor, Laura Hamilton, who has been a chef in the local area for nearly twenty years, starting as head chef at The Grand Union restaurant and, until the end of 2003, chef/manager at Robbie's in Warwick.
