An often unjustifiably maligned cuisine but many cultures have vegetarian traditions and offer excellent vegetarian dishes, such as: Indian Gujarati (which is almost totally vegetarian), Spanish tumbet, Mexican quesadillas, Italian risottos, French ratatouille, Greek dolmas, Russina borcht, Middle Eastern falafels, many Chinese dishes, Japanese tempura, Thai pad kee maow, and Creole hush puppies.

You may have noticed that Germany food has not been mentioned as a vegetarian option. The Germans have no word for 'vegetarian'. The nearest we have ever been to a vegetarian meal in Germany was a rather disdainful "well, this has only a got a little bit of meat in it".
